Paomo is a meal to sit down for. In Xi’an, the bread, broth and meat are the main event, so leave time for the order and preparation instead of treating it as another quick snack between queues. Decide first whether you want beef or lamb and which kitchen fits your food requirements. Then ask how that restaurant wants the bread prepared.
Order the kind of bowl you mean
Save 羊肉泡馍 for lamb paomo and 牛肉泡馍 for beef paomo. Niuyangrou paomo, 牛羊肉泡馍, is a broader beef-and-lamb description you may see on a sign. It is more useful to establish what is actually in your chosen bowl than to assume a large sign lists one fixed recipe.
Paomo is also part of other dish names. Hulutou paomo, 葫芦头泡馍, is a different pork-based preparation, not simply another spelling of lamb paomo. The city’s description of Xi’an’s traditional food businesses distinguishes these dishes. For a Muslim traveller, asking only for “paomo” is therefore less precise than showing the meat and full dish name you want.
| Name to recognise | What it tells you | What still needs a question |
|---|---|---|
| 羊肉泡馍 — yangrou paomo | A lamb-paomo order. | The stock, fat, seasonings and kitchen practice. |
| 牛肉泡馍 — niurou paomo | A beef-paomo order. | Whether the whole preparation meets your requirements. |
| 小炒泡馍 — xiaochao paomo | A different, stronger-flavoured preparation. | Ask how sour or spicy the restaurant makes it. |
| 葫芦头泡馍 — hulutou paomo | A distinct pork-based dish. | Do not confuse it with the beef or lamb choices. |
Let the restaurant explain the bread step
Hand-tearing bread can be part of the meal, but first ask how the restaurant serves the version you ordered. Some visitors enjoy doing it themselves; others prefer help or a preparation that is already done. There is no need to imitate a stranger’s technique without knowing whether you are working on the correct bread or bowl.
If you are tearing the bread, ask the server to show the size they recommend. Keep the pieces consistent enough for the kitchen’s method, and leave your own bowl where staff indicate. The preparation is part of the food experience, not a competition to prove that you understand local life better than another diner.

Choose broth and seasoning deliberately
A normal bowl and a xiaochao version do not offer the same flavour. The city’s June 2026 account of Shaanxi’s wheat foods describes xiaochao paomo as a more sour and spicy variation. Ask the restaurant about its version before choosing it for someone who wants a gentler meal.
If you care about the amount of liquid, ask whether the restaurant can make the bowl brothier or drier, and how that affects its usual preparation. Do not assume the same English label gives the same texture everywhere. Keep extra chilli and condiments separate when that is possible, and taste the bowl before adding them.
| A useful request | Chinese | When it helps |
|---|---|---|
| Choose beef | 我们想要牛肉泡馍。 | When a broad sign does not establish the meat in your order. |
| Choose lamb | 我们想要羊肉泡馍。 | When the meat choice is the first decision. |
| Ask about the bread | 这个馍要自己掰吗? | Before beginning the hand-tearing step. |
| Keep extra chilli separate | 辣椒可以另外放吗? | When the base flavour is acceptable but extra heat is not wanted. |
Give paomo its own place in the food walk
A bowl with bread is substantial. If this is the dish you most want to try, make it the seated main meal and keep earlier snacks small. Several sandwiches and skewers beforehand can make the paomo stop feel like an obligation. A short lane walk afterwards gives the meal a natural finish.
For a party with different appetites, ask about portion sizes and sharing before ordering. Do not assume a restaurant can divide every dish in the way you expect. Children may prefer a smaller first order or a different dish; there is no need for every member of the group to eat the same bowl.
Keep a halal request complete
Beef or lamb describes a meat, not the full preparation standard. If you need halal meat, a wholly halal kitchen, no cooking alcohol or other handling requirements, explain them before ordering. Broth and fat are part of the question, and removing a garnish after cooking does not change them.
A guide can help translate and find a suitable restaurant, but should not substitute a personal impression for an answer from the kitchen. Save the exact shop pin after a successful meal. Another branch or a similar family name may have a different menu and should be checked separately.
Questions that change the plan
Can paomo be a quick takeaway snack?
It is better planned as a seated meal, especially when you want to prepare the bread and understand the order. Choose a simpler snack when your museum or train timing is tight.
Is xiaochao simply the same bowl with chilli on top?
Treat it as a different preparation and ask about the restaurant’s flavour. Do not assume removing a final condiment makes it identical to another bowl.
Does beef paomo automatically mean halal?
No. Establish the kitchen, meat sourcing and preparation requirements with the restaurant, rather than relying on the animal named in the dish.
